This beef shin is directly from the foreleg and is packed full of flavour for slow cooking. With a rich flavour, it’s perfect for hearty stews.

The Butcher: While originally quite tough, due to being from an oft-worked muscle, slow cooking brings out the tenderness of this cut.
In The Kitchen: Fry the shin in a pan until brown, then add to a pot with your chosen root vegetables, onions, stock and a good splash of wine or ale.
