We chose Tony at Popsie Fish as they are one of the few fishers catching salmon using a static net or line – only 11% of Alaskan salmon is caught this way. Popsie fish off the beach so fuel consumption is zero, and by-catch is zero. Non-static gear caught in the generic fisheries uses plenty of fuel and discards other fish like Pollack. Popise is a family owned and run business, employing 12 people (including themselves) over the 3 month season. Proud of their superior product, they keep control over the production, icing in slurry immediately on catch, handling the fish by the head not the tail (which prevents bruising and breaking the spine) and getting the fish to the processing in top condition. We support them as part of the Slow Fish Network of Small Scale fishers.
Sockeye salmon spend 1 to 3 years in lakes and streams and a further 1 to 3 years in the sea. They return to their place of birth to reproduce and die. They feed on plankton and small crustaceans, which accounts for the bright orange colour of the sockeye’s flesh. When cooking wild salmon, be careful not to over-cook it as it’s easy to do if you are used to cooking fatty farmed salmon – best to leave it a little pink in the centre.
This product is blast frozen on landing and therefore will be delivered to you defrosted.
